Recipe: Homemade Hot Pocket

I have to credit a FB friend for inspiring this delicious recipe.  :)  Thanks, Jaki!

This is my version of a Broccoli Cheddar Chicken Hot Pocket.
  • 2 chicken breasts
  • 1 bag shredded cheddar cheese- set aside 1/4 bag to use for topping
  • 1/2 to 1 bag frozen broccoli, chopped
  • 1/2 container whipped cream cheese
  • 1 can broccoli cheese soup- split in half
  • 1 package of crescent rolls (the refrigerated kind that you roll out and bake)
  1. Season the chicken (I used Famous Dave's Steakburger seasoning... we just love that stuff, but salt and pepper would be just fine) and bake (40 minutes at 350 usually does the trick).  
  2. Chop the chicken into small pieces (Slap Chop works awesome for this!). 
  3. Combine chicken, chopped broccoli, cheddar cheese, cream cheese and 1/2 can of broccoli cheese soup. 
  4. Open the crescent roll package and gently press each pair of triangles together to make 4 rectangles.  
  5. Drop a small amount of the chicken mixture into the center and fold dough together, pressing edges. 
  6. Bake at 375 for 12 minutes. 
  7. Top with remaining cheddar cheese and soup and bake for an additional 3-5 minutes or until topping is melted.
